Dr. Jerrad Legako earned his M.Sc. in Food Science from Oklahoma State University and his Ph.D. in Animal Sciences from Texas Tech University. He currently serves as Associate Professor at Texas Tech, where he focuses on pre- and post-harvest factors that influence beef quality, including beef flavor development through analytical chemistry.
